Before you freeze any kind of pepper you'll want to give it a good wash. You want to try and get rid of all the bacteria that might be lurking, thus preventing food poisoning. When you have washed your peppers you can use a sharp knife to cut them to your desired shape and size. Get rid of the inner parts as per the normal process.
Put your chopped up peppers in a freezer bag and then simply place them in the freezer. You should try and remove as much of the air from the bag as you can. Within a day of placing the peppers in the freezer they should already be frozen. Alternatively you can put the peppers in a Tupperware container then place a folded paper towel on top to absorb excess moisture.
Another method you might want to try involves cutting the peppers in half, removing the stems and cutting out the seeds. Then give the peppers a wash. Boil up a pan of water on the stove and then add the peppers for a few minutes. When this is done you can place the halved peppers into ice-cold water for a few minutes. After that you can take the peppers out and give them a dry with a towel. The peppers should then be placed on a tray and placed into the freezer so that they can freeze through. After that you just put the peppers in a freezer bag.
Whenever you need some peppers for one of your meals, simply take them out of the bag as required. If you want to thaw the peppers you can do so by running them under some water. Some recipes you can simply pop them straight into the pot and they will thaw with the heat of cooking.
