So now you have either bought your corn or you have picked it. What you must do is remove the outer husk casing and silk. Then take a big pot of water and bring it to the boil. Place several ears of corn into pan. Aim to add in as many as you can whilst ensuring they remain covered. Allow to boil for a few minutes.
Fill your sink with ice and water and then place the boiled corn cobs into this cold water for a few minutes. Using another sink you should fill it with icy water again and place the corn into this for another few minutes. This should ensure that the corn is cool enough for you to handle it and also for it to go into the freezer.
In order to freeze the whole cob of corn you can simply place them into freezer bags. If you can use a vacuum sealer that's great. FoodSaver do some excellent models. By sucking out all of the air with a vacuum sealer you'll make the corn last much longer. Alternatively you can use a plastic wrap to wrap the corn before placing them into the bags.
If you would rather freeze just the corn niblets then you should place the ears of corn vertically on a chopping board and using a knife, cut off the kernels of corn. You should try and cut as close to the cob as possible. Put the corn into freezer bags and try to get as much air out of the bags as possible. If you can use a vacuum sealer then this is even better. Then put them into the freezer and they ought to last for roughly a year.
